Fruits And Vegetables Processing and Preservation Techniques

Winrock International is seeking a Farmer-to-Farmer volunteer to support an 18-day volunteer assignment (including travel) in Orkadiere, Kanel, Matam, Northern Senegal. The volunteer’s primary role will be to train the Citizens Working Group (CWG) of Orkadiere household women groups in fruit and vegetable processing and preservation using optimal practices and enhanced processing techniques and technologies. The training will include natural methods for processing fruits and vegetables while adhering to food safety and hygienic practices. The CWG is particularly interested in learning how to make homemade preserves, jams, and juice, and is seeking processing techniques for tomato, onion, hibiscus, baobab, hot pepper, sweet pepper, carrot, radish, and eggplant. The group is also keen to explore alternatives to the chemical spices used in their cooking and learn how to make natural bouillon. This will not only improve the health of the community but also initiate and develop a flourishing income-generating activity. 

To qualify for this volunteer position, the individual should possess the following qualifications and background: 

  • University degree in agriculture, food science, or related field 

  • Experience using modern and efficient equipment for fruits and vegetable processing and preservation 

  • Ten years’ experience in fruit and vegetable processing, including experience training others in this topic 

  • Excellent written and verbal communication skills 

  • French language skills preferred, but not mandatory
